300ml recently pressed clementine juice
200ml newly squeezed lemon juice
500g caster sugar

To make the Premix (produces 850ml, to serve 10)

400ml decent vodka

150ml peach-flavored liqueur
200ml clementine syrup (as made above)
Whole cranberries, for garnish
Mandarin essential oil, as a final touch

Directions

Making the Cordial: Place the listed ingredients in a pan, bring to a gentle boil, agitating so the sugar melts. Then, take off the burner and leave to cool completely. Transfer into an sterilised bottle, seal and refrigerate it in the refrigerator, where it will keep for about four weeks.

To make Batch Mix: Pour every liquids into one large bottle, leave to sit for 60 minutes, then filter it preferably using cheesecloth, so it's fully clarified.

For serving: Pour 85ml of the batch mix into a cocktail shaker packed with ice, gently stirring carefully for a minute to chill. Strain into a frosted cocktail glass or a similar vessel, decorate with the cranberries and finish with a light spray with the mandarin essence above the glass.
